A bold, family-style dish made for sharing. Rich Grass-Fed Angus Mince is simmered with warm spices, layered over crispy nachos, and finished with melted cheese, fresh salsa and creamy avo.

Ingredients
For the mince
- 500 g LA FARMS Grass-Fed Angus Mince
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- ½ tsp chilli flakes, optional
- 2 tbsp tomato paste
- 1 tin chopped tomatoes, 400 g
- ½ cup water
- Salt and black pepper, to taste
For serving
- 1 large bag tortilla chips
- 1 cup grated cheddar or mozzarella cheese
- 1 avocado, mashed
- 1 tomato, diced
- ½ red onion, finely chopped
- Fresh coriander, chopped
- Squeeze of fresh lemon or lime
- Plain yoghurt or sour cream, optional
Method
- Heat the olive oil in a pan over medium heat. Add the onion and cook until soft and golden.
- Add the garlic, cumin, smoked paprika, coriander and chilli flakes. Stir for 1 minute until fragrant.
- Add the LA FARMS Grass-Fed Angus Mince and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the tomato paste, chopped tomatoes and water. Season with salt and black pepper.
- Simmer for 15–20 minutes until the mince is rich, saucy and full of flavour.
- Arrange the tortilla chips on a large ovenproof tray. Spoon the mince over the chips and sprinkle with grated cheese.
- Place under the grill for 3–5 minutes, or until the cheese has melted.
- Top with mashed avo, diced tomato, red onion, fresh coriander and a squeeze of lemon or lime.
- Serve immediately while warm and loaded.
