Grass-Fed Angus Mince Loaded Nachos

A bold, family-style dish made for sharing. Rich Grass-Fed Angus Mince is simmered with warm spices, layered over crispy nachos, and finished with melted cheese, fresh salsa and creamy avo.

Ingredients

For the mince

  • 500 g LA FARMS Grass-Fed Angus Mince
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • ½ tsp chilli flakes, optional
  • 2 tbsp tomato paste
  • 1 tin chopped tomatoes, 400 g
  • ½ cup water
  • Salt and black pepper, to taste

For serving

  • 1 large bag tortilla chips
  • 1 cup grated cheddar or mozzarella cheese
  • 1 avocado, mashed
  • 1 tomato, diced
  • ½ red onion, finely chopped
  • Fresh coriander, chopped
  • Squeeze of fresh lemon or lime
  • Plain yoghurt or sour cream, optional

Method

  1. Heat the olive oil in a pan over medium heat. Add the onion and cook until soft and golden.
  2. Add the garlic, cumin, smoked paprika, coriander and chilli flakes. Stir for 1 minute until fragrant.
  3. Add the LA FARMS Grass-Fed Angus Mince and cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the tomato paste, chopped tomatoes and water. Season with salt and black pepper.
  5. Simmer for 15–20 minutes until the mince is rich, saucy and full of flavour.
  6. Arrange the tortilla chips on a large ovenproof tray. Spoon the mince over the chips and sprinkle with grated cheese.
  7. Place under the grill for 3–5 minutes, or until the cheese has melted.
  8. Top with mashed avo, diced tomato, red onion, fresh coriander and a squeeze of lemon or lime.
  9. Serve immediately while warm and loaded.
