L.A. FARMS Wagyu Classic Cheese Burger with Tallow Fries


Ingredients:

For the Burger:

  • 1 L.A. FARMS Wagyu beef patty 
  • 1 slice of cheddar or your favorite cheese
  • 1 toasted seeded burger bun
  • 1 tablespoon aioli sauce
  • A handful of rocket (arugula)
  • 1-2 tablespoons Prego sauce (or your preferred marinara)
  • 2-3 slices of red onion
  • Pickles (to taste)

For the Tallow Fries:

Prepare the Tallow Fries: (Frying Method)

  • Cut the Potatoes: Peel (optional) and cut potatoes into fry shapes 
  • Soak: Soak the cut fries in cold water for about 30 minutes to remove excess starch. This helps achieve a crispier fry.
  • Preheat Tallow: In a deep fryer or a heavy pot, heat the beef tallow over medium-high heat until it reaches about 175°C.
  • Fry the Fries: Drain and dry the soaked potatoes. Fry them in batches, cooking until golden and crispy (about 5-7 minutes). Remove and drain on paper towels. Season with salt while still hot.

Prepare the Tallow Fried: (Oven Baked)

  • Cut the Potatoes: Preheat your oven to 220°C. Peel (optional) and cut the russet potatoes into fry shapes.
  • Soak: Soak the cut fries in cold water for about 30 minutes to remove excess starch. This helps achieve a crispier fry. After soaking, drain and thoroughly dry them with a clean kitchen towel.
  • Toss with Tallow: Coat with Tallow: Place the dried fries in a large bowl. Drizzle the melted beef tallow over the fries (start with 2 tablespoons and add more if needed), then sprinkle with salt and any optional seasonings. Toss well until the fries are evenly coated.
    3. Bake the Fries:
  • Prepare Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the fries in a single layer on the baking sheet, ensuring they are not overcrowded (this helps them crisp up)
  • Bake: Bake in the preheated oven for about 25-30 minutes. Flip the fries halfway through the baking time to ensure even cooking. Bake until they are golden brown and crispy.

2. Cook the Wagyu Patty:

  • Preheat Grill or Skillet: Heat a grill or skillet over medium-high heat.
  • Season the Patty: Season the Wagyu patty with salt and pepper on both sides.
  • Cook: Grill or pan-sear the patty for about 3-4 minutes on one side, flip, and place the cheese slice on top. Cook for an additional 2-3 minutes or until the cheese is melted and the desired doneness is reached.

3. Assemble the Burger:

  • Toast the Bun: Lightly toast the seeded burger bun on the grill or in a toaster.
  • Spread Aioli: Spread 1 tablespoon of aioli sauce on the bottom half of the toasted bun.
  • Layer the Rocket: Add a handful of rocket on top of the aioli.
  • Add the Patty: Place the cooked Wagyu patty with melted cheese on top of the rocket.
  • Add Toppings: Top with Prego sauce, sliced red onion, and pickles.
  • Complete the Burger: Cap with the top half of the bun.

4. Serve:

  • Serve the Wagyu cheese burger with a side of crispy tallow fries. Enjoy your meal!

  • For an extra kick, consider adding jalapeños or your favourite hot sauce.
  • You can customize the burger further with additional toppings like avocado or sauces.
