Grass-Fed Angus Mince Meatballs in a Tomato Sauce

Ingredients:

For the meatballs:

500g Grass-Fed Angus mince
1 small onion, finely chopped
2 cloves of garlic, minced
1/4 cup breadcrumbs
1/4 cup fresh parsley, chopped
1 egg
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
Salt and pepper to taste

For the tomato sauce:

2 tablespoons olive oil
1 small onion, finely chopped
2 cloves of garlic, minced
1 can (400g) crushed tomatoes
1 tablespoon tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley, chopped for garnish

Instructions:

In a mixing bowl, combine the Grass-Fed Angus mince, finely chopped onion, minced garlic, breadcrumbs, chopped parsley, egg, ground cumin, ground coriander, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

Shape the mixture into meatballs, about 1-2 inches in diameter. You should be able to make approximately 20 meatballs. Set them aside.

Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic. Sauté until they become translucent and fragrant, about 2-3 minutes.

Add the crushed tomatoes and tomato paste to the skillet. Stir well to combine.

Season the tomato sauce with ground cumin, ground coriander, paprika, dried oregano, salt, and pepper. Stir again to incorporate the spices into the sauce.

Gently place the meatballs into the tomato sauce, making sure they are evenly spaced. Reduce the heat to low, cover the skillet, and let the meatballs simmer in the sauce for about 20-25 minutes, or until they are cooked through.

While the meatballs are cooking, you can prepare a side dish of your choice such as rice or pasta.

Once the meatballs are cooked, remove the skillet from the heat. Sprinkle fresh chopped parsley over the meatballs for garnish.
