Koftas Made With Grass-Fed Angus Mince

L.A. FARMS Grass-Fed Angus Mince Kofta Recipe


For the Kofta:

500g L.A. FARMS Grass-Fed Angus Mince
1 small onion, finely grated
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground paprika
1/4 teaspoon cayenne pepper (adjust to your spice preference)
Salt and black pepper to taste
1-2 tablespoons olive oil (for grilling)

For the Yogurt Sauce:

1 cup Greek yogurt
1/2 cucumber, finely grated
1-2 cloves garlic, minced
1 tablespoon fresh mint, finely chopped
1 tablespoon fresh dill, finely chopped
Salt and black pepper to taste

Prepare the Kofta Mixture:

In a large bowl, combine the L.A. FARMS Grass-Fed Angus Mince, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
Shape the Kofta:

Take small portions of the mixture and shape them into small, elongated meatballs or sausage shapes. Insert a skewer through each kofta for easy grilling. If using wooden skewers, remember to soak them in water for 30 minutes to prevent burning.
Preheat the Grill:

Preheat your grill to medium-high heat. Alternatively, you can use a stovetop grill pan or broil in the oven.
Grill the Kofta:

Brush the kofta with a bit of olive oil. Grill them for about 10-12 minutes, turning occasionally, until they are cooked through and have a nice char on the outside. Make sure they reach an internal temperature of 160°F (71°C).
Prepare the Yogurt Sauce:

While the kofta are grilling, prepare the yogurt sauce. In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, chopped mint, dill, salt, and black pepper. Stir well to combine. Refrigerate until ready to serve.

Once the kofta are done, serve them hot with the yogurt sauce on the side. You can also serve them in pita bread or flatbreads with sliced tomatoes, cucumbers, and lettuce for a complete meal.
